To celebrate this ocean-focused issue of alive, we’ve whipped up dishes that reflect the sea’s ever-shifting shades of blue. Some of the recipes call on pale blues (like the faint stain on the stem of a blue foot mushroom). Others go bold (think the heavily pigmented butterfly pea flower). And some feature pops of familiar dark blue foods (oh hi, blueberries). No matter how saturated or subtle the dish’s final color, every single one benefits from its blue building blocks. (Promise!)
